  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 bell peppers, chopped
  • 2 cups potatoes, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Remove the beef from the pot and set aside. In the same pot, add onions and garlic, cooking until softened.
  3. Add the carrots, bell peppers, and potatoes, cooking for another 5 minutes.
  4. Stir in the diced tomatoes, beef broth, paprika, thyme, and the browned beef. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
