- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 bell peppers, chopped
- 2 cups potatoes, diced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 2 tablespoons paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides.
- Remove the beef from the pot and set aside. In the same pot, add onions and garlic, cooking until softened.
- Add the carrots, bell peppers, and potatoes, cooking for another 5 minutes.
- Stir in the diced tomatoes, beef broth, paprika, thyme, and the browned beef. Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours, or until the beef is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
