Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 cup cooked ground beef
  • 1/2 onion, finely chopped
  • 1/2 cup potato, mashed
  • Salt and pepper to taste
  • Butter for frying
  • Sour cream for serving

Instructions

  1. In a large bowl, combine flour and salt. Make a well in the center and add the egg and water.
  2. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.
  3. Cover the dough with a towel and let it rest for 30 minutes.
  4. In a skillet, sauté the onion until translucent. Add the cooked ground beef and mashed potato. Season with salt and pepper.
  5. Roll out the dough to about 1/8 inch thickness. Cut into circles using a cookie cutter.
  6. Place a teaspoon of the beef filling in the center of each circle. Fold the dough over and pinch the edges to seal.
  7. Bring a large pot of salted water to a boil. Drop in the pierogi and cook until they float to the surface, about 3-5 minutes.
  8. Remove with a slotted spoon and set aside.
  9. In a skillet, melt butter over medium heat. Fry the pierogi until golden brown on both sides.
  10. Serve hot with sour cream.
