This hearty and comforting beef pot roast is cooked low and slow in a crock pot, resulting in tender, flavorful meat and delicious vegetables.

- 3 to 4 pounds beef chuck roast
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, quartered
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 bay leaf
Instructions
- Season the beef chuck roast with salt and black pepper on all sides.
- In a large skillet over medium-high heat, heat the olive oil. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Transfer the roast to the crock pot.
- In the same skillet, add chopped onion and minced garlic. Sauté until softened, about 2-3 minutes, then transfer to the crock pot.
- Add chopped carrots and quartered potatoes to the crock pot.
- In a bowl, mix together beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour this mixture over the roast and vegetables in the crock pot.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and falls apart easily.
- Once done, remove the roast and vegetables from the crock pot. Let the roast rest for a few minutes before slicing.
- Serve warm with the vegetables and broth from the crock pot.
Notes
- For added flavor, you can marinate the beef in your favorite spices overnight.
- Feel free to add other vegetables like celery or parsnips for variation.
