- 1 bone-in beef rib roast (5–7 pounds)
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix olive oil, salt, pepper, garlic, rosemary, and thyme.
- Rub the mixture all over the beef rib roast.
- Place the roast on a rack in a roasting pan.
- Roast in the oven for 15 minutes.
- Reduce the temperature to 325°F (163°C) and continue roasting.
- Cook until the internal temperature reaches your desired doneness (135°F for medium-rare).
- Remove from the oven and let it rest for 20-30 minutes before slicing.
