- 3 lbs beef roast
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 onion, chopped
- 3 carrots, sliced
- 2 sprigs rosemary
Instructions
- Preheat your oven to 350°F (175°C).
- Rub the beef roast with olive oil, salt, and pepper.
- In a large skillet, sear the roast on all sides until browned.
- Place the roast in a roasting pan.
- Add garlic, onion, carrots, beef broth, and rosemary around the roast.
- Cover the pan with foil and roast for 2 hours.
- Remove the foil and roast for an additional 30 minutes to brown the top.
- Let the roast rest for 15 minutes before slicing.
