Savory beef rolls filled with fresh herbs and served with tangy pickled cucumbers.

- 1 lb beef flank steak, thinly sliced
- 1 cup fresh herbs (parsley, cilantro, or basil), chopped
- 1/4 cup cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup pickled cucumbers, finely chopped
- Salt and pepper to taste
- 1 tablespoon olive oil for cooking
- 1 cup pickled cucumber slices for serving
Instructions
- Lay the beef slices flat on a clean surface and pound them gently to flatten.
- In a bowl, mix the cream cheese, mayonnaise, chopped herbs, salt, and pepper until well combined.
- Spread a thin layer of the cream cheese mixture onto each beef slice.
- Place a few pieces of pickled cucumber on top of the cream cheese mixture.
- Roll the beef slices tightly and secure them with toothpicks.
- Heat olive oil in a skillet over medium-high heat. Cook the beef rolls for 3-4 minutes on each side until browned and cooked through.
- Remove from the skillet and let rest for a few minutes before slicing.
- Serve the beef rolls with additional pickled cucumber slices on the side.
Notes
- You can use other cuts of beef if flank steak is not available.
- Feel free to experiment with different herbs based on your preference.
- For a spicier kick, add some sliced jalapeños to the filling.
