  • 1 lb beef flank steak, thinly sliced
  • 1 cup fresh herbs (parsley, cilantro, or basil), chopped
  • 1/4 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup pickled cucumbers, finely chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking
  • 1 cup pickled cucumber slices for serving

Instructions

  1. Lay the beef slices flat on a clean surface and pound them gently to flatten.
  2. In a bowl, mix the cream cheese, mayonnaise, chopped herbs, salt, and pepper until well combined.
  3. Spread a thin layer of the cream cheese mixture onto each beef slice.
  4. Place a few pieces of pickled cucumber on top of the cream cheese mixture.
  5. Roll the beef slices tightly and secure them with toothpicks.
  6. Heat olive oil in a skillet over medium-high heat. Cook the beef rolls for 3-4 minutes on each side until browned and cooked through.
  7. Remove from the skillet and let rest for a few minutes before slicing.
  8. Serve the beef rolls with additional pickled cucumber slices on the side.
