Ingredients

- 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon rosemary
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium-high heat.
- Brown the short ribs on all sides, about 3-4 minutes per side.
- Remove the ribs and set them aside.
- Add chopped onion and garlic to the skillet, cooking until soft.
- Stir in beef broth, red wine, tomato paste, salt, pepper, thyme, and rosemary.
- Bring the mixture to a simmer.
- Return the ribs to the skillet, cover, and transfer to the oven.
- Bake for 2.5 to 3 hours or until the meat is tender.
- Remove from the oven, let rest for 10 minutes, then serve.
Notes
- For best results, use bone-in short ribs.
- Pair with mashed potatoes or polenta.
- Store leftovers in an airtight container in the fridge.
