  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon rosemary

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Brown the short ribs on all sides, about 3-4 minutes per side.
  4. Remove the ribs and set them aside.
  5. Add chopped onion and garlic to the skillet, cooking until soft.
  6. Stir in beef broth, red wine, tomato paste, salt, pepper, thyme, and rosemary.
  7. Bring the mixture to a simmer.
  8. Return the ribs to the skillet, cover, and transfer to the oven.
  9. Bake for 2.5 to 3 hours or until the meat is tender.
  10. Remove from the oven, let rest for 10 minutes, then serve.
