- 2 pounds beef stew meat, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 stalks celery, sliced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 bay leaves
- 1 cup frozen peas
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides.
- Add the chopped onion, carrots, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
- Pour in the beef broth and add the diced tomatoes, potatoes, thyme, rosemary, salt, pepper, and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
- Stir in the frozen peas and cook for an additional 5 minutes.
- Remove bay leaves before serving. Enjoy your hearty beef soup!
Notes
- For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) towards the end of cooking.
