  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 bay leaves
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef stew meat and brown on all sides.
  2. Add the chopped onion, carrots, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Pour in the beef broth and add the diced tomatoes, potatoes, thyme, rosemary, salt, pepper, and bay leaves. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes.
  6. Remove bay leaves before serving. Enjoy your hearty beef soup!

Notes

  • For a thicker soup, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) towards the end of cooking.
