Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 cup potatoes, diced

Instructions

  1. Heat a large pot over medium-high heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
  5. Return beef to the pot.
  6. Add broth, water, salt, pepper, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  8. Add potatoes and cook for an additional 30 minutes.
  9. Remove bay leaf before serving.
