A hearty beef soup packed with flavor and nutrients.
Ingredients

- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 2 cups water
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 bay leaf
- 1 cup potatoes, diced
Instructions
- Heat a large pot over medium-high heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
- Return beef to the pot.
- Add broth, water, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add potatoes and cook for an additional 30 minutes.
- Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Can add other vegetables as desired.
- Store leftovers in the refrigerator for up to 3 days.
