Description

A hearty and flavorful beef soup made with tender beef chunks, vegetables, and aromatic spices.


Ingredients

  • 500g beef chunks
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 6 cups beef broth
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef chunks and brown on all sides.
  3. Remove beef and set aside.
  4. In the same pot, sauté onion, carrots, and celery until softened.
  5. Add garlic and tomato paste, cook for 1 minute.
  6. Return beef to the pot.
  7. Add salt, pepper, thyme, bay leaf, and beef broth.
  8. Bring to a boil, then reduce heat and simmer for 1 hour.
  9. Remove bay leaf before serving.

Notes

  • You can add potatoes or noodles for extra heartiness.
  • Adjust seasoning to taste.
  • Store leftovers in the fridge for up to 3 days.
