Ingredients

- 2 pounds beef chuck, cut into cubes
- 4 cups beef broth
- 2 cups water
- 1 medium onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Add onion and garlic, sauté until translucent.
- Pour in beef broth and water.
- Add carrots, potatoes, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove bay leaf before serving.
Notes
- Adjust seasoning to taste.
- Can add other vegetables like peas or corn.
- For a thicker soup, add flour or cornstarch.
