Description
A hearty and comforting beef stew or pot roast, perfect for a family dinner. Tender beef slow-cooked with vegetables in a rich broth.
Ingredients

- 2 lbs beef chuck, cut into chunks
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Brown the beef on all sides, then remove.
- Add onion and garlic, sauté until softened.
- Stir in carrots and potatoes, cook for 5 minutes.
- Return beef to the pot. Add broth, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 2 hours or until beef is tender.
- Season with salt and pepper before serving.
Notes
- For a thicker stew, mix 1 tbsp flour with water and stir in before simmering.
- You can use a slow cooker on low for 6-8 hours.
- Leftovers taste even better the next day.
