Description
A hearty and comforting beef stew made with tender chunks of beef, vegetables, and rich broth.
Ingredients

- 1 kg beef chuck, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 potatoes, cubed
- 2 celery stalks, chopped
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, sauté onion and garlic until soft.
- Add carrots, potatoes, and celery. Cook for 5 minutes.
- Return the beef to the pot. Add beef broth, tomato paste, thyme, and rosemary.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.
- Season with salt and pepper. Serve hot.
Notes
- For extra flavor, you can sear the beef in batches.
- Let the stew rest for 10 minutes before serving.
- Store leftovers in the fridge for up to 3 days.
