Ingredients

  • 1 lb beef stew meat
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides, then remove and set aside.
  3. Add onion, garlic, carrots, and celery to the pot. Cook until softened.
  4. Stir in tomato paste, thyme, and rosemary.
  5. Return beef to the pot and pour in beef broth.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Add potatoes and cook for another 30 minutes until tender.
  8. Season with salt and pepper before serving.

Notes

  • For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the pot.
  • Store leftovers in the fridge for up to 3 days.
