A hearty beef stew recipe for a comforting meal.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and brown on all sides.
- Remove beef and set aside.
- Add onions and garlic, sauté until softened.
- Stir in tomato paste, then return beef to the pot.
- Add beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove bay leaf before serving.
Notes
- Serve with crusty bread.
- Leftovers can be refrigerated for up to 3 days.
- This stew can also be made in a slow cooker.
