Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onions and garlic, sauté until softened.
  5. Stir in tomato paste, then return beef to the pot.
  6. Add beef broth, carrots, potatoes, thyme, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  8. Remove bay leaf before serving.
