Ingredients

- 2 pounds beef bones
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, smashed
- 10 cups water
- 2 bay leaves
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Roast the beef bones for 30 minutes.
- In a large pot, combine roasted bones, onion, carrots, celery, garlic, and water.
- Add bay leaves, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 4-6 hours.
- Strain the soup to remove solids.
- Serve hot or store in the fridge for later use.

- This soup can be frozen for up to 3 months.
- Use fresh herbs for added flavor.
