- 2 tbsp olive oil
- 1 tbsp kosher salt
- 1 tbsp freshly ground black pepper
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
Instructions
- Preheat oven to 425°F (220°C).
- Pat the beef tenderloin dry with paper towels.
- Rub the tenderloin with olive oil, then season with salt and pepper.
- In a small bowl, mix Dijon mustard, garlic, rosemary, and thyme.
- Spread the mustard mixture evenly over the tenderloin.
- Place the beef on a roasting rack in a baking dish.
- Roast for 25-30 minutes or until internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from oven and let rest for 10 minutes before slicing.
- Slice and serve immediately.
