Ingredients

  • 1 whole chicken (about 45 pounds)
  • 1 can of beer (your choice)
  • 2 tablespoons olive oil
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your grill to medium heat (about 350°F).
  2. In a small bowl, mix together the olive oil, paprika, garlic powder, onion powder, thyme, salt, black pepper, and cayenne pepper to create a spice rub.
  3. Pat the chicken dry with paper towels and rub the spice mixture all over the chicken, including under the skin.
  4. Open the can of beer and drink or pour out half of it. Insert the can into the cavity of the chicken, ensuring it stands upright.
  5. Place the chicken upright on the grill, either directly on the grates or on a beer can chicken holder.
  6. Close the lid and cook for about 1 to 1.5 hours, or until the internal temperature of the chicken reaches 165°F.
  7. Carefully remove the chicken from the grill (it will be hot) and let it rest for 10-15 minutes before carefully removing the beer can.
  8. Carve and serve the chicken, garnished with fresh herbs if desired.

  • For a deeper flavor, use a flavored beer or marinate the chicken overnight with the spice rub.
  • Ensure the chicken is stable while cooking to avoid tipping over.
  • You can also bake this chicken in the oven at 375°F for about the same cooking time.
