  • 1 tablespoon black peppercorns
  • 1 tablespoon mustard seeds
  • 1 tablespoon coriander seeds
  • 4 cloves garlic, minced
  • 1 onion, quartered
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 1 head of cabbage, cut into wedges
  • 4 cups beef broth
  • 2 cups water

Instructions

  1. Rinse corned beef under cold water.
  2. Place corned beef in a large pot or Dutch oven.
  3. Add peppercorns, mustard seeds, coriander seeds, garlic, onion, beef broth, and water.
  4. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 2.5 to 3 hours, or until tender.
  6. Add carrots and potatoes during the last 30 minutes of cooking.
  7. Add cabbage during the last 15 minutes.
  8. Remove meat and vegetables; let rest for 10 minutes before slicing.
