- 2 boneless, skinless chicken breasts, diced
- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, zucchini, bell peppers, red onion, and garlic.
- Add olive oil, oregano, basil, paprika, salt, and black pepper. Toss well.
- Spread mixture evenly in a baking dish.
- Bake for 25-30 minutes until chicken is cooked through.
- Sprinkle feta cheese and parsley on top before serving.
