Ingredients

- 2 pounds potatoes, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, chopped
- 1/4 cup dill pickles, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh dill, chopped
Instructions
- Boil the diced potatoes in salted water until tender.
- Drain and let cool.
- In a large bowl, mix mayonnaise, mustard, salt, and pepper.
- Add the cooled potatoes, onion, celery, pickles, and dill.
- Toss gently to combine.
- Chill in the refrigerator for at least an hour before serving.

- For added flavor, include chopped green onions.
- Adjust mayonnaise to your desired creaminess.
- Store leftovers in the refrigerator for up to three days.
