A delicious potato salad without mayonnaise, perfect for summer gatherings.
Ingredients

- 2 pounds of potatoes
- 1/4 cup of olive oil
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of Dijon mustard
- 1/2 cup of diced red onion
- 1/2 cup of chopped celery
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions
- Boil the potatoes until fork-tender, about 15-20 minutes. Drain and let cool.
- Cut the cooled potatoes into bite-sized pieces.
- In a bowl, whisk together olive oil, apple cider vinegar, and Dijon mustard.
- Add the diced onion, chopped celery, and parsley to the potatoes.
- Pour the dressing over the potato mixture and toss well.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.

- Use any type of potatoes you prefer.
- Add hard-boiled eggs for extra protein.
- Store leftovers in the refrigerator for up to 3 days.
