- 2 pounds potatoes, peeled and diced
- 4 hard-boiled eggs, chopped
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 cup celery, chopped
- 1/2 cup red onion, chopped
- 1/4 cup pickles, chopped
- Salt and pepper to taste
Instructions
- Boil the diced potatoes in salted water until tender, about 15 minutes.
- Drain and let the potatoes cool.
- In a large bowl, mix mayonnaise and mustard.
- Add the cooled potatoes, chopped eggs, celery, onion, pickles, salt, and pepper.
- Toss gently until well combined.
- Chill in the refrigerator for at least 1 hour before serving.
