- 2 pounds potatoes, peeled and diced
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 cup chopped green onions
- 1/4 cup chopped celery
- 1/4 cup chopped pickles
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain and let the potatoes cool.
- In a large bowl, mix sour cream, mayonnaise, and Dijon mustard.
- Add green onions, celery, pickles, salt, and pepper to the mixture.
- Once the potatoes are cool, gently fold them into the dressing.
- Refrigerate for at least 1 hour before serving.

- For added flavor, consider adding chopped herbs like dill or parsley.
