- 1 lb 1 lb chicken breasts
- 14.5 oz 1 can diced tomatoes
- 1 cup 1 cup corn
- 1 cup 1 cup black beans
- 1 packet 1 packet taco seasoning
- 1 cup 1 cup shredded cheese (optional)
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add diced tomatoes, corn, black beans, and taco seasoning on top of the chicken.
- Stir to combine all ingredients well.
- Cover and cook on low for 6 hours or on high for 3 hours.
- Once cooked, shred the chicken with two forks and stir back into the mixture.
- If desired, sprinkle shredded cheese on top and let it melt before serving.
- Serve with tortillas, rice, or enjoy as a standalone dish.
