  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon ground cinnamon
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. In a medium bowl, mix the softened cream cheese, blueberries, powdered sugar, and vanilla extract until well combined.
  2. Spread the blueberry cream cheese mixture on 4 slices of bread and top with the remaining slices to create sandwiches.
  3. In another bowl, whisk together the eggs, milk, and ground cinnamon until well blended.
  4. Heat a skillet over medium heat and add a little butter to coat the pan.
  5. Dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
  6. Place the soaked sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
  7. Remove from the skillet and serve warm with maple syrup.
