- 8 oz cream cheese, softened
- 1 cup fresh blueberries
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup milk
- 1 teaspoon ground cinnamon
- Butter for cooking
- Maple syrup for serving
Instructions
- In a medium bowl, mix the softened cream cheese, blueberries, powdered sugar, and vanilla extract until well combined.
- Spread the blueberry cream cheese mixture on 4 slices of bread and top with the remaining slices to create sandwiches.
- In another bowl, whisk together the eggs, milk, and ground cinnamon until well blended.
- Heat a skillet over medium heat and add a little butter to coat the pan.
- Dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
- Place the soaked sandwiches in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove from the skillet and serve warm with maple syrup.
Notes
- Feel free to add more berries or even chocolate chips to the cream cheese filling for added flavor.
- For a richer taste, use half-and-half instead of milk.
