Description
Delicious homemade blueberry pierogi filled with fresh blueberries and a hint of sugar, perfect for a sweet treat or dessert.

- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup water
- 1/2 teaspoon salt
- 2 cups fresh blueberries
- 1/4 cup sugar
- 2 tablespoons butter
- for serving sour cream
Instructions
- In a large bowl, combine flour and salt. Make a well in the center and add the egg and water.
- Mix until it forms a dough. Knead on a floured surface until smooth, about 5 minutes.
- Cover and let it rest for 30 minutes.
- In a separate bowl, combine blueberries and sugar, gently mixing to coat the berries.
- Roll out the dough on a floured surface until it’s about 1/8 inch thick.
- Cut circles using a round cutter or glass, about 3 inches in diameter.
- Place a teaspoon of the blueberry filling in the center of each circle.
- Fold the dough over and pinch the edges to seal tightly.
- Bring a large pot of salted water to a boil. Cook pierogi in batches until they float, about 3-5 minutes.
- Remove with a slotted spoon and transfer to a serving plate.
- Optional: In a skillet, melt butter and sauté the pierogi until golden brown.
- Serve warm with sour cream on the side.
