Description

Delicious homemade blueberry pierogi filled with fresh blueberries and a hint of sugar, perfect for a sweet treat or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries
  • 1/4 cup sugar
  • 2 tablespoons butter
  • for serving sour cream

Instructions

  1. In a large bowl, combine flour and salt. Make a well in the center and add the egg and water.
  2. Mix until it forms a dough. Knead on a floured surface until smooth, about 5 minutes.
  3. Cover and let it rest for 30 minutes.
  4. In a separate bowl, combine blueberries and sugar, gently mixing to coat the berries.
  5. Roll out the dough on a floured surface until it’s about 1/8 inch thick.
  6. Cut circles using a round cutter or glass, about 3 inches in diameter.
  7. Place a teaspoon of the blueberry filling in the center of each circle.
  8. Fold the dough over and pinch the edges to seal tightly.
  9. Bring a large pot of salted water to a boil. Cook pierogi in batches until they float, about 3-5 minutes.
  10. Remove with a slotted spoon and transfer to a serving plate.
  11. Optional: In a skillet, melt butter and sauté the pierogi until golden brown.
  12. Serve warm with sour cream on the side.
