  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the mirror oven to 450°F (232°C).
  2. Rub the roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Place the roast in the mirror oven, bone side down.
  4. Cook for 20 minutes at 450°F (232°C).
  5. Reduce the temperature to 325°F (163°C) and continue cooking for about 2 hours.
  6. Check the internal temperature; it should reach 130°F (54°C) for medium rare.
  7. Remove from the oven and let it rest for 20 minutes before slicing.
