- 1 bone-in prime rib roast (5–7 lbs)
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Pat the prime rib roast dry with paper towels.
- Rub olive oil all over the roast.
- Season generously with salt, pepper, garlic powder, rosemary, and thyme.
- Place the roast bone-side down in a roasting pan.
- Roast in the oven for 15 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue roasting until your desired doneness is reached, about 1.5-2 hours for medium-rare.
- Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.
- Remove the roast from the oven and let it rest for 20-30 minutes before carving.
