  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib roast dry with paper towels.
  3. Rub olive oil all over the roast.
  4. Season generously with salt, pepper, garlic powder, rosemary, and thyme.
  5. Place the roast bone-side down in a roasting pan.
  6. Roast in the oven for 15 minutes.
  7. Reduce the oven temperature to 325°F (163°C) and continue roasting until your desired doneness is reached, about 1.5-2 hours for medium-rare.
  8. Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.
  9. Remove the roast from the oven and let it rest for 20-30 minutes before carving.
