Ingredients

- 1 bone-in prime rib roast (about 5–7 pounds)
- 2 tablespoons olive oil
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Combine olive oil, salt, pepper, garlic, rosemary, and thyme in a bowl.
- Rub the mixture all over the prime rib roast.
- Place the roast bone-side down in a roasting pan.
- Roast for 15 minutes at 450°F, then reduce the temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches your desired doneness (about 1.5-2 hours for medium rare).
- Remove from the oven and let rest for 20-30 minutes before slicing.
Notes
- Use a meat thermometer for accurate doneness.
- Let the roast sit at room temperature for 1 hour before cooking.
