- 8 oz pasta (penne or fusilli recommended)
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, roughly chopped
- 8 oz Boursin cheese (garlic & herbs flavor)
- 1/2 cup chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and cherry tomatoes to the skillet, cooking for another 2-3 minutes until the tomatoes start to soften.
- Stir in the spinach and cook until wilted.
- Add the Boursin cheese and chicken broth to the skillet, stirring until the cheese is melted and the sauce is creamy.
- Add the cooked pasta to the skillet, tossing to combine and heat through.
- Serve immediately, garnished with fresh parsley.
