Ingredients

  • 2.5 lbs beef short ribs
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F.
  2. Season beef short ribs with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Brown ribs on all sides, then remove.
  4. Add onion, garlic, carrots, and celery. Cook until softened.
  5. Stir in tomato paste, thyme, and rosemary.
  6. Add beef broth and red wine, scraping the bottom of the pot.
  7. Return ribs to the pot, cover, and braise in the oven for 3 hours until tender.
  8. Skim excess fat from the sauce and serve hot.
