Ingredients

- 2.5 lbs beef short ribs
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F.
- Season beef short ribs with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat. Brown ribs on all sides, then remove.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Stir in tomato paste, thyme, and rosemary.
- Add beef broth and red wine, scraping the bottom of the pot.
- Return ribs to the pot, cover, and braise in the oven for 3 hours until tender.
- Skim excess fat from the sauce and serve hot.
Notes
- Use bone-in short ribs for best flavor.
- Can be made in a slow cooker on low for 8 hours.
- Serve with mashed potatoes or polenta.
