Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 red bell peppers, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chunks with salt and pepper, then brown them on all sides in the hot oil. Remove and set aside.
  3. In the same pot, add the chopped onion and sliced red peppers. Cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Return the browned beef to the pot. Add the beef broth, diced tomatoes, Worcestershire sauce, oregano, and thyme. Stir to combine.
  6. Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
  7. Braise in the oven for 2 to 2.5 hours, or until the beef is tender and easily shreds with a fork.
  8. Remove the pot from the oven and let it cool slightly before serving.
  9. Garnish with fresh parsley before serving.
