- 2 lbs beef chuck roast, cut into large chunks
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 red bell peppers, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chunks with salt and pepper, then brown them on all sides in the hot oil. Remove and set aside.
- In the same pot, add the chopped onion and sliced red peppers. Cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Return the browned beef to the pot. Add the beef broth, diced tomatoes, Worcestershire sauce, oregano, and thyme. Stir to combine.
- Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.
- Braise in the oven for 2 to 2.5 hours, or until the beef is tender and easily shreds with a fork.
- Remove the pot from the oven and let it cool slightly before serving.
- Garnish with fresh parsley before serving.

- Serve with crusty bread or over rice for a complete meal.
- You can add other vegetables like carrots or mushrooms for extra flavor.
