- 2 pounds potatoes, peeled and cut into cubes
- 1 large onion, thinly sliced
- 3 tablespoons olive oil
- 1 cup vegetable broth
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onions and sauté until they are translucent and slightly caramelized, about 5-7 minutes.
- Add the cubed potatoes to the skillet and stir to combine with the onions.
- Pour in the vegetable broth and sprinkle garlic powder, salt, and pepper over the top.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Check occasionally and stir to ensure the potatoes don’t stick to the bottom of the pan.
- Once the potatoes are cooked through, remove from heat and garnish with fresh parsley before serving.
Notes
- Feel free to add herbs like thyme or rosemary for extra flavor.
- For a richer taste, you can substitute butter for olive oil.
