Ingredients

  • 2 pounds potatoes, peeled and cut into cubes
  • 1 large onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 cup vegetable broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onions and sauté until they are translucent and slightly caramelized, about 5-7 minutes.
  3. Add the cubed potatoes to the skillet and stir to combine with the onions.
  4. Pour in the vegetable broth and sprinkle garlic powder, salt, and pepper over the top.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, or until the potatoes are tender.
  6. Check occasionally and stir to ensure the potatoes don’t stick to the bottom of the pan.
  7. Once the potatoes are cooked through, remove from heat and garnish with fresh parsley before serving.

Notes
