Ingredients

  • 2 lbs beef short ribs
  • 1 cup red wine
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tbsp butter

Instructions

  1. Season short ribs with salt and pepper.
  2. Heat olive oil in a pot and brown ribs on all sides. Remove and set aside.
  3. Sauté onion, carrots, and celery in the same pot.
  4. Add tomato paste and thyme, cook for 1 minute.
  5. Pour in red wine and beef broth, bring to a simmer.
  6. Return ribs to the pot, cover, and braise for 2.5 hours.
  7. Boil potatoes until tender, drain, and mash with milk, butter, and garlic.
  8. Serve ribs over mashed potatoes.

  • Use a dry red wine for best flavor.
