Description
Tender braised short ribs served with creamy garlic mashed potatoes.
Ingredients

- 2 lbs beef short ribs
- 1 cup red wine
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 2 tbsp butter
Instructions
- Season short ribs with salt and pepper.
- Heat olive oil in a pot and brown ribs on all sides. Remove and set aside.
- Sauté onion, carrots, and celery in the same pot.
- Add tomato paste and thyme, cook for 1 minute.
- Pour in red wine and beef broth, bring to a simmer.
- Return ribs to the pot, cover, and braise for 2.5 hours.
- Boil potatoes until tender, drain, and mash with milk, butter, and garlic.
- Serve ribs over mashed potatoes.
Notes
- Use a dry red wine for best flavor.
- Braising time may vary depending on rib thickness.
- Let ribs rest before serving for juicier meat.
