Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, sauté spinach and cherry tomatoes until soft.
- Whisk the eggs in a bowl and add sautéed vegetables.
- Pour the mixture into a greased baking dish.
- Sprinkle feta cheese on top.
- Bake for 20 minutes or until the eggs are set.
- Toast the whole grain bread.
- Mash the avocado and spread it on the toast.
- Serve the baked eggs with avocado toast on the side.
