- 2 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons butter

- Pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add onion and garlic, sauté until softened.
- Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add broccoli and cook for an additional 5 minutes.
- Stir in milk and cheese. Cook until cheese melts and soup is heated through.
- Season with salt and pepper to taste. Serve hot.
