- 4 cups fresh broccoli florets
- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and garlic, and sauté until the onion is translucent.
- Add the broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the broccoli is tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
- Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
