- 1 cup brown sugar
- 1 can (20 oz) pineapple chunks (with juice)
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp vegetable oil
- 1/2 tsp black pepper
Instructions
- Heat oil in a large skillet over medium heat.
- Add chicken and cook until browned, about 5 minutes per side.
- In a bowl, mix brown sugar, soy sauce, pineapple juice, garlic, and ginger.
- Pour the mixture over the chicken and add pineapple chunks.
- Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
- Mix cornstarch and water, then stir into the sauce to thicken.
- Cook for 2 more minutes until the sauce is glossy.
- Serve hot over rice.

- Adjust sweetness by reducing brown sugar if needed.
