  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and Cajun seasoning, cook until browned (5-6 minutes).
  3. Add onion, garlic, and bell pepper, cook until softened (3-4 minutes).
  4. Stir in orzo, diced tomatoes, chicken broth, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until orzo is tender.
  6. Remove from heat, garnish with parsley, and serve.
