- 1 lb boneless, skinless chicken breasts, diced
- 1 cup orzo pasta
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 onion, diced
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and Cajun seasoning, cook until browned (5-6 minutes).
- Add onion, garlic, and bell pepper, cook until softened (3-4 minutes).
- Stir in orzo, diced tomatoes, chicken broth, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes until orzo is tender.
- Remove from heat, garnish with parsley, and serve.
Notes
- Adjust Cajun seasoning to taste.
- Substitute vegetable broth for a vegetarian version.
