Ingredients

- 1 lb Cajun-style smoked sausage, sliced
- 1 cup long-grain white rice
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned, about 5 minutes.
- Add bell pepper, onion, and garlic. Cook until softened, about 3 minutes.
- Stir in rice, Cajun seasoning, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- Remove from heat and let stand for 5 minutes before serving.
Notes
- Use andouille sausage for authentic Cajun flavor.
- Add hot sauce for extra spice.
- Leftovers keep well in the fridge for 3 days.
