- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 2 large tomatoes, sliced
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- 2 tbsp balsamic glaze
Instructions
- Preheat grill to medium-high heat.
- Brush chicken breasts with olive oil and season with salt, pepper, and oregano.
- Grill chicken for 6-7 minutes per side or until fully cooked.
- Top each chicken breast with tomato slices and mozzarella.
- Cover grill and cook for 2-3 minutes until cheese melts.
- Remove chicken from grill and garnish with fresh basil.
- Drizzle with balsamic glaze before serving.
Notes
- Use chicken thighs for extra juiciness.
- Fresh mozzarella works best.
- Serve warm.
