Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 lb Italian sausage, casings removed
  • 1 pint cherry tomatoes, halved
  • 8 oz fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sausage and cook until browned, breaking it into small pieces.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in cherry tomatoes and cook for 3-4 minutes until softened.
  6. Add cooked pasta to the skillet and toss to combine.
  7. Remove from heat and stir in mozzarella and basil.
  8. Season with salt and pepper to taste.
  9. Serve immediately.
