- 2 cups apples, peeled and diced
- 1 teaspoon cinnamon
- 1 cup caramel sauce

Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Mix until well combined and press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add in 1 cup sugar and vanilla extract, mixing until fully combined.
- Add the eggs one at a time, mixing well after each addition until the batter is smooth.
- In a separate bowl, toss the diced apples with cinnamon. Gently fold the apples into the cheesecake batter.
- Pour the batter over the crust in the springform pan and spread evenly.
- Bake in the preheated oven for 55-60 minutes or until the center is set and the edges are lightly browned.
- Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, drizzle with caramel sauce and top with whipped cream if desired.
