Ingredients

  • 4 slices of thick bread (such as brioche or challah)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 2 ripe bananas, sliced
  • 1/4 cup brown sugar
  • Maple syrup, for serving

Instructions

  1. In a bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.
  2. Heat 1 tablespoon of butter in a skillet over medium heat.
  3. Dip each slice of bread into the egg mixture, allowing excess to drip off, and place in the skillet.
  4. Cook until golden brown on both sides, about 3-4 minutes per side. Remove from skillet and keep warm.
  5. In the same skillet, add remaining butter and sliced bananas. Cook for 2 minutes until bananas are slightly softened.
  6. Sprinkle brown sugar over the bananas and cook for an additional 2-3 minutes until caramelized.
  7. Serve the French toast topped with caramelized bananas and drizzled with maple syrup.

Notes
