Ingredients

- 4 slices of thick bread (such as brioche or challah)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter
- 2 ripe bananas, sliced
- 1/4 cup brown sugar
- Maple syrup, for serving
Instructions
- In a bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.
- Heat 1 tablespoon of butter in a skillet over medium heat.
- Dip each slice of bread into the egg mixture, allowing excess to drip off, and place in the skillet.
- Cook until golden brown on both sides, about 3-4 minutes per side. Remove from skillet and keep warm.
- In the same skillet, add remaining butter and sliced bananas. Cook for 2 minutes until bananas are slightly softened.
- Sprinkle brown sugar over the bananas and cook for an additional 2-3 minutes until caramelized.
- Serve the French toast topped with caramelized bananas and drizzled with maple syrup.
Notes
- For added flavor, you can sprinkle some chopped nuts on top before serving.
- Feel free to substitute almond milk or any other milk alternative for a dairy-free version.
