- 2 cups grated carrots
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 3 eggs
- 3/4 cup vegetable oil
- 1 tsp vanilla extract
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a bowl, mix carrots, sugars, flour, baking soda, cinnamon, nutmeg, and salt.
- Add eggs, oil, and vanilla. Stir until combined.
- Pour batter into the pan and bake for 40 minutes.
- While cake bakes, beat cream cheese, sour cream, and powdered sugar until smooth.
- Spread cheesecake mixture over the baked carrot cake.
- Bake for another 20 minutes until set.
- Cool completely before serving.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- Top with whipped cream or nuts if desired.
- Use full-fat cream cheese for best results.
