  • 1 teaspoon sesame oil

Instructions

  1. Start by ricing the cauliflower. You can do this by using a food processor or grating it with a box grater until it resembles rice.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and diced onion to the skillet, sautéing until the onion becomes translucent.
  4. Stir in the mixed vegetables and cook for another 2-3 minutes until they are tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  6. Add the riced cauliflower to the skillet, stirring to combine with the vegetables and eggs.
  7. Pour in the soy sauce and sesame oil, mixing everything together. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
