- 1 medium head of cauliflower, riced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Start by ricing the cauliflower. You can do this by using a food processor or grating it with a box grater until it resembles rice.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and diced onion to the skillet, sautéing until the onion becomes translucent.
- Stir in the mixed vegetables and cook for another 2-3 minutes until they are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the riced cauliflower to the skillet, stirring to combine with the vegetables and eggs.
- Pour in the soy sauce and sesame oil, mixing everything together. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Season with salt and pepper to taste. Garnish with chopped green onions before serving.
