Description
Delicious and sweet cheese and raisin crepes, perfect for breakfast or dessert.
Ingredients

- 1 cup all-purpose flour
- 1 1/2 cups milk
- 2 eggs
- 1/4 teaspoon salt
- 2 tablespoons butter
- 8 ounces cream cheese
- 1/4 cup powdered sugar
- 1/2 cup raisins
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine the flour, milk, eggs, and salt. Whisk until smooth.
- Stir in the melted butter and let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for about 2 minutes until the edges lift and the bottom is lightly golden.
- Flip the crepe and cook for another minute on the other side. Repeat with the remaining batter.
- In a separate bowl, mix the softened cream cheese, powdered sugar, raisins, and vanilla extract until well combined.
- Spread a couple of tablespoons of the cream cheese mixture onto one side of each crepe and fold over.
- Serve warm, optionally dusted with powdered sugar.
Notes
- You can add cinnamon to the cream cheese mixture for extra flavor.
- These crepes can be made ahead of time and reheated in a skillet or microwave.
