Description

Delicious and sweet cheese and raisin crepes, perfect for breakfast or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 eggs
  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine the flour, milk, eggs, and salt. Whisk until smooth.
  2. Stir in the melted butter and let the batter rest for 15 minutes.
  3. Heat a non-stick skillet over medium heat and lightly grease it.
  4. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for about 2 minutes until the edges lift and the bottom is lightly golden.
  5. Flip the crepe and cook for another minute on the other side. Repeat with the remaining batter.
  6. In a separate bowl, mix the softened cream cheese, powdered sugar, raisins, and vanilla extract until well combined.
  7. Spread a couple of tablespoons of the cream cheese mixture onto one side of each crepe and fold over.
  8. Serve warm, optionally dusted with powdered sugar.

Notes

  • You can add cinnamon to the cream cheese mixture for extra flavor.
  • These crepes can be made ahead of time and reheated in a skillet or microwave.
