Ingredients

  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until combined.
  4. Add eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.
  7. Remove from the oven and allow to cool for 10 minutes. Spread sour cream over the top of the cheesecake.
  8. Return to the oven and bake for an additional 10 minutes.
  9. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  10. Refrigerate for at least 4 hours or overnight before serving.
