Rich and creamy cheesecake with a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing until combined.
- Add eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but slightly jiggly.
- Remove from the oven and allow to cool for 10 minutes. Spread sour cream over the top of the cheesecake.
- Return to the oven and bake for an additional 10 minutes.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a fruit topping, add fresh berries or fruit compote on top before serving.
- Ensure all ingredients are at room temperature for the best texture.
