- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 2 cups enchilada sauce
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a pan over medium heat. Add onion and garlic, cook until soft.
- Add ground beef, chili powder, cumin, salt, and black pepper. Cook until beef is browned.
- Spread 1/2 cup enchilada sauce in a baking dish.
- Fill each tortilla with beef mixture and cheese. Roll tightly and place in the dish.
- Pour remaining sauce over enchiladas and sprinkle with remaining cheese.
- Bake for 20 minutes until cheese is bubbly.
- Garnish with cilantro before serving.

- Use corn tortillas for a gluten-free option.
- Add diced jalapeños for extra heat.
- Store leftovers in an airtight container for up to 3 days.
